Chilli-Garlic Dosa with Curry-Leaf Salt & a Side of Emotional Damage

Are you a single woman in your thirties lying horizontal, wanting to rot in bed but still needing to eat because you can’t commit to anything, including your depression? Yeah. Same.

Don’t get me wrong, I’m not here to spread negativity. This is actually one of those hopeful recipes. Because no amount of ingredient scarcity can stop you from dreaming of a delicious dosa.


Now, if you’re an NRI living in the US (or anywhere, really), dosa batter is a grocery staple. So technically, this isn’t even a recipe because crispy-on-the-outside, fluffy-on-the-inside plain dosa is comfort enough.


But sometimes… you need a kick.


Sometimes, you need to be gently yanked out of the duvet hole before you become part of it.

Self-care sounds like BS when you’re in a slump. But it doesn’t have to be perfect. You don’t need to commit to a full-on masala dosa with chutney and sambar (even though that’s probably what’ll fix your life).


You can start with this:





Chilli-Garlic-Curry-Leaf Dosa. Or whatever you’ve got in your pantry. The rule is simple:

  • Something spicy
  • Something herby
  • Something sharp
  • Something salty
  • Something green (if you have it)

Chilli-Garlic Dosa with Curry-Leaf Salt


Ingredients:

  • Dosa batter
  • Garlic (minced or powder)
  • Dried curry leaves
  • Red chilli flakes or powder
  • Salt
  • Oil, butter, or ghee

Step 1 — Make Curry-Leaf Salt

  • Heat a dosa pan on low
  • Toast ~20 curry leaves with 1 tsp salt for ~30 sec
  • Let cool and crush into a fine powder

Step 2 — Make Chilli-Garlic Oil

  • Mix 1 tbsp chilli flakes (or ½ tbsp powder), 2 cloves minced garlic, and some curry-leaf salt
  • Heat oil and pour it over the mix. Set aside.

Step 3 — Make the Dosa

  • Heat your pan on medium
  • Pour batter, spread in circular motion
  • Let it bubble and form a crust
  • Drizzle your chilli-garlic oil
  • When it lifts from the edges, flip and fold

Tip:

If your pan is being a hater (sticky), rub a halved onion dipped in oil on the surface — it works like magic.

 

Quick Side Salad (Cucumber Edition)


Ingredients:

  • Cucumber
  • Garlic
  • Salt
  • Rice wine vinegar
  • Soy sauce
  • Maple syrup or sugar (optional)
  • Chilli flakes (optional)

Steps:

  1. Smash/chop garlic and cucumber. Salt them to draw out moisture. Let sit ~10 min.
  2. Drain, pat dry, toss in a dry bowl.
  3. Add 1 tbsp rice wine vinegar, 1 tsp soy sauce, a touch of maple syrup, and chilli flakes (if you like heat).
  4. Chill for 15–30 min. Eat fresh or store for 2–3 days.

That’s it.
You didn’t spiral. You didn’t UberEats. You cooked something spicy and salty and surprisingly comforting.
Some days, that is self-care.
